Funfetti Cupcakes

This recipe is only the cake batter and may contain nuts due to the almond extract, which you could omit. Please see my go-to frosting recipe if you don't have your own favorite recipe!

Makes: 12 regular-sized, 24 mini

1. Preheat the oven to 350°F and prepare your cupcake pan (either adding your favorite liners or greasing the tins_

2. In a large bowl, combine flour, sugar, baking powder, and salt

3. To the dry mix, add water, vegetable oil, vanilla extract, and almond extract, and mix until smooth

4. Add the sour cream to the mix and gently stir until just combined

5. Gently fold in the rainbow sprinkles

6. Pour the tins about 3/4 full and bake for 13-21 minutesThe mini cupcakes bake more for 13-16 minutes; the normal size cupcakes bake for 19-21 minutes

8. Once the cakes are cool to the touch, frost and then serve :)
